These cheese straw wafers are incredibly easy to make, and with a delightfully soft crumbly buttery and cheesy interior and a beautiful golden crust, you had probably double up on the recipe — or make several batches!

Easy to make, these rich and buttery cheese wafers with a golden crust will disappear in no time

Ingredients:
  • 1 cup finely grated sharp extra-old Cheddar cheese
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup unbleached white flour
  • 1/2 teaspoon sea salt
  • 1/2 to 1 teaspoon cayenne
Instructions:
  • Preheat an oven to 400°.

  • In a medium bowl, mash together all of the ingredients with a fork until well blended.

  • Transfer the mixture to a pastry bag (or a ziploc bag with a 1/2-inch hole cut in one corner). Pipe onto an ungreased baking sheet in 12 to 14 lines about 3 to 4 inches in length. You can then lightly press the dough with a fork or leave as is.

  • Alternately, you can shape the dough into 12 to 14 small balls or logs and flatten them.

  • Bake for 12 minutes or until lightly browned. Let cool on a wire rack before serving.

  • Serve warm or at room temperature.

Makes 12 to 14 wafers
