Healthy Peanut Butter Chocolate Cups
Assuming you can resist the urge to consume too many of these raw little bites, there is nothing to feel guilty about when you enjoy one or two of these chocolate peanut butter cups. Made with whole and healthy ingredients, they are so rich and tasty you would think they must be bad for you. And they are incredibly easy to make too, with no cooking—you'll only need to melt the coconut oil, and mix everything together in a medium bowl before pouring the mixture into a mini muffin tray and then freezing.

I've used peanut butter here, but if you prefer, try these with almond butter or cashew butter. I've also used brown rice syrup to sweeten these as this it is a slightly less sweet alternative and because I like the unique somewhat caramel and malty flavour, but feel free to use honey or maple syrup instead.

Rich and delicious healthy chocolate peanut butter cups—easy and no-bake

Preparation: 15 minutes

Ingredients:
  • 1/2 cup melted coconut oil
  • 1/2 cup natural peanut butter or other nut butter
  • 1/2 cup raw cacao powder
  • 1/4 cup brown rice syrup or honey
  • 2 teaspoons ground cinnamon
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon sea salt, or to taste
  • 2 tablespoons hemp seeds
Instructions:
  • Line a mini muffin tray with 20 mini paper liners.

  • In a medium bowl, mix all the ingredients together until well blended and smooth. Transfer the mixture evenly into the muffin cups. Sprinkle a little extra sea salt over top if desired.

  • Transfer the tray to the freezer to set—about 2 hours. Remove from the freezer for a few minutes before serving. Store any remaining peanut butter cups in the freezer.
