Spicy Parmesan Crackers

I have unaccountably been craving cheese crackers for some time now, and these light flaky crackers are just the little crispy spicy delights that can satisfying any such desire. Delicious on their own, they're also a delightful addition to hors d'Ĺ“uvre platters.

These crispy and flaky Parmesan cheese crackers are dusted with spices are easy to make, and are a great addition to snack platters

Preparation: 10 minutes
Cooking time: 12 minutes

Ingredients:
  • 2/3 cup unbleached white flour
  • 3 tablespoons finely grated Parmesan Cheese
  • pinch of sea salt
  • pinch of curry powder
  • pinch of cayenne
  • 1/4 cup (1/2 stick) cold butter, cut into pieces
  • 1 to 2 tablespoons cold milk or buttermilk
  • ground cumin and paprika for sprinkling
Instructions:
  • Preheat an oven to 375° and line a baking sheet with parchment paper.

  • In a mixing bowl, combine the flour, cheese, salt, curry powder and cayenne. Cut the butter into the flour mixture using a pastry cutter or a fork. The butter should be reduced to small pieces. Add the milk gradually until a dough is formed. Knead briefly, shape into a ball, and wrap with plastic wrap. Chill in the refrigerator for 30 minutes.

  • On a lightly floured board, roll the dough out until it is about 1/8-inch thick. Cut into small squares and transfer to the baking sheet. Sprinkle with some cumin and paprika.

  • Bake for 12 minutes or until the crackers are nicely browned. Cool slightly on a wire rack before serving.

Makes about 30 crackers

  11. Lulu, that's a tough question. Since starting my kitchen blog, I rarely make the same thing. Though I don't cook every day, I probably make at least 5 new things in a given week. Sometimes these are recipes I have made up, sometimes they are adapted from another blog or from one of my many cookbooks.

  12. I know what you mean about too many recipes and not enough time. With summer here (sort of, I was walking the dogs yesterday evening wearing two layers of fleece and gloves!) all my friends and neighbors seem to be twice as social then in the winter months, and we have many more evenings out and less time to cook :(

    Having a food blog (and reading others) has really opened my eyes to what can be made at home. I never would have thought to make homemade crackers before. But now I understand the appeal (and just how easy it is!)
