Potato Salad with Blue Cheese Dressing

I've had a few requests since I started Lisa's Kitchen for nutritional information, recipe suggestions and food tips. I'm honored that folks are seeking my advice, and I'll continue to answer your questions to the best of my abilities. I'm looking forward to the day when this site will become a virtual culinary reference stop.

Recently a friend was wondering if I could recommend any good potato salad recipes. I'm a little late meeting his request, but I couldn't resist trying this potato salad with a creamy blue cheese dressing that has all the goodness of a traditional potato salad but packed with plenty of flavor. Possible variations would include substituting Feta cheese for the the blue cheese.

Creamy and flavorful potato salad tossed with a blue cheese dressing

Preparation: 15 minutes
Cooking time: 8 to 10 minutes

Salad:
  • 4 large potatoes (1 1/2 lbs or 675 g)
  • juice from 1 lemon (3 tablespoons)
  • 1 red pepper, seeded and sliced
  • 2 green onions, thinly sliced
  • paprika for garnish
Dressing:
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 3 tablespoons lemon juice
  • a few dashes of hot pepper sauce or a pinch or two of cayenne
  • 1/2 to 3/4 cup crumbled blue cheese or Feta
  • 2 green onions, finely chopped
  • sea salt and fresh ground black pepper to taste
Instructions:
  • Chop the potatoes into bite-sized pieces and add to a large saucepan of water with a little salt. Bring to a boil, reduce the heat to medium and partially cover. Cook for 8 to 10 minutes or until the potatoes are just tender. Drain and transfer to bowl. Toss with lemon juice and set aside to cool.

  • To make the dressing, whisk together the mayonnaise, sour cream, lemon juice, and hot pepper sauce or cayenne. Stir in most of the blue cheese, reserving a small amount for garnish, and the green onion. Season with salt and pepper.

  • Once the potatoes are cool, add the red pepper and most of the green onion to the bowl, reserving some green onion for garnish. Stir in the dressing and sprinkle the entire salad with paprika. Garnish with the remaining green onion and blue cheese. Served chilled

Makes 4 to 6 servings

  2. This potato salad looks great! Thanks for the substitution, although I love blue cheese, it is not a great favourite in this house. But I could split the recipe and do half with blue and half with feta!
